Prestigious golf club’s scheme helps youngsters get into the hospitality industry

TIME management, keeping a cool head and knowing your hollandaise from your bechamel are all essential skills for making the cut in a fast-paced professional kitchen.

And thanks to one modern apprenticeship programme, more young Scots are being given the opportunity to rise to the challenge.

For several years, Loch Lomond Golf Club have run a well-established internship and apprenticeship programme, which aims to provide opportunities to youngsters keen to get ahead in the hospitality and leisure industry.

The 20-month programme allows apprentices to combine on-the-job learning with work-based assessments, while working their way towards a National Vocational Qualification – and a rewarding career.

Nancy Laird joined the course in 2015 and has relished the challenge of working with professional chefs fromday one. “I knew the apprentice programme would challenge me but I was confident I could achieve far greater results given the opportunity,” she explained.
“There have been long hours and tough goals set for me to achieve but personally I have loved every minute and found it so rewarding learning from the best.”

Throughout Loch Lomond Golf Club’s Chef Apprenticeship course, trainees are guided by experienced chefs, learning a range of core skills, covering soups, stocks and sauces, bread, baking and pastry, fish and meat preparation and cooking, as well as menu planning and costing, and catering for larger numbers.

Dedicated apprentices can expect to build skills and confidence, going on to work in the private members club’s various kitchens, just like Declan Kerray, who has been at the pass since 2013. He said: “It’s been a surreal experience working at Loch Lomond – I can’t believe I’m here.

“I’ve learned so much in a short time from the very best chefs and feel lucky and proud of what I’ve achieved. I have progressed my career substantially and have even recently been promoted to a junior sous chef.
